Head Chef Josh Smallwood’s passion is working with local and fresh seafood. Josh brings a wealth of knowledge and experience in hatted restaurants and a focus on modern Australian cuisine that has been honed throughout his career.
Sourcing excellent local produce from Maravista Farm, located in the Noosa Hinterland. The culinary garden is filled with fresh organic produce that inspires Josh and enables delicious dishes for diners to enjoy.
Popular choices are the Spanner crab spaghettini, with garlic, chilli, shallot, and lemon and baked local scallops, vadouvan butter, cauliflower, and lardo.
Main course 200g Eye Fillet, Darling Downs, potato rosti, roasted Jerusalem artichoke puree, confit onions, and red wine jus.
Or the confit duck leg and roast breast, spiced & braised red cabbage, macadamia, and Pedro Ximenez glaze.
