Seabourne Distillery celebrates the harmony forged between the land and sea, embracing the vibrant soul of Noosa.

Founded by Noosa local Hayden Weir, Seabourne Distillery offers a premium range of small-batch gins, aperitifs and limited releases made from an infusion of local botanicals.

Seabourne’s story stemmed from a desire to craft a range of spirits that reflect why so many of us fall in love with Noosa. Seabourne’s spirits are crafted to taste like Noosa feels, from the sea’s magnetic allure and the earth’s richness.

Seabourne Distillery won gold and silver medals at the San Fransico and Singapore World Spirit Competitions for 2022 in their first opening year.

Enjoy a crafted cocktail in the modern, white open-plan bar where you can relax amongst the copper pot stills and check out the ever-changing Cocktail Menu, showcasing fresh seasonal produce and classic cocktails mixed with a Seabourne twist.

Seabourne’s Master Distiller, Thiago Lopes, is a strategic engineer and a passionate naturalist. His obsession sparked with the birth of Brazil’s experimental microbrewing renaissance. Thiago sold bottles of homebrew from the back of a pushbike, all while mastering his degree in mechanical engineering.

He has since become one of the country’s most exciting new distilling talents, forging his reputation for complex and distinctive spirits at some of Australia’s most innovative independent distilleries.

Seabourne Distillery’s Award-winning range starts with their Coastal Dry Gin – A modern dry gin with piney and citrus notes from native white kunzea flower and sunrise lime. Awash with the freshness of river mint and a spice-driven undercurrent of mountain pepper leaf, juniper and local sea parsley. A slow sipper, best enjoyed over ice with premium tonic and a wedge of grapefruit.

Berry Blush Gin – An insatiably delicious gin with a bramble of raspberries and blackberries that imbue a natural pink hue. Juniper and sandalwood offer rolling spice, while native peppermint gum, lemon aspen and vanilla pod impart a smooth, fresh finish. With no sugar and plenty of panache, enjoy simply with tonic and a wedge of ruby grapefruit.

Sunset Bitter Aperitif – Crafted with a berry gin base, this fragrant aperitif is aromatised with fresh citrus peel, peppermint gum and native botanicals. Native maarr tea leaf and mountain pepper berries from nearby coastal and hinterland regions. The Sunset Bitter can be enjoyed with soda, tonic, or a classic spritz.

Pacific Gin – Seabourne and Sofitel have come together to create a signature spirit that celebrates their shared love of life lived between the hinterland and the shore.

This modern gin is awash with citrus, with surges of spice and juniper. Rolling notes of sunrise lime, chamomile, lemon aspen and mountain pepper leaf. Best enjoyed over ice with a premium tonic and wedge of grapefruit.

Seabourne Distillery offers a gin-blending class and distillery tours, or you can relax and unwind at the Bar and try one of their limited releases or fantastic signature cocktails.

To buy these award-winning spirits, Seabourne Distillery is open Monday to Friday, 10 am to 5 pm, or buy online. The Bar is open from Friday, 4 pm to 8 pm and Saturday and Sunday from 12 pm to 8 pm.
